Black-Eyed Pea Salad
1 medium cucumber
1 can black-eyed peas
1 can diced tomatoes
2 Tbsp balsamic vinegar or Italian dressing
- Wash your hands.
- Slice or cube cucumber and place in a medium-sized bowl.
- Drain black eyed peas and diced tomatoes, and add to the bowl.
- Add balsamic vinegar or Italian dressing.
- Stir ingredients.
- Chill before serving.
